Ingredients:
2 large eggs
1 cup egg whites
Salt and pepper to taste
1 bell pepper
2 large handfuls of spinach
A large handful of baby carrots
½ cup shredded pepper jack cheese
How to make Veggie Egg Bites:
1. Preheat your oven to 350 degrees Fahrenheit and lightly grease a muffin tin with cooking oil.
2. In a bowl, mix the eggs and egg whites, adding salt and pepper. Beat them together with a fork.
3. Chop the bell pepper, spinach, and carrots in a food processor or chopper.
4. Fold the vegetables and cheese into the egg mixture.
5. Pour the mixture into the muffin cups, filling each about halfway. A 1/4 cup measuring cup works great for this.
6. Bake for around 20 minutes, or until they are set.
